Ingredients
Guacamole (see recipe in other blog)
Potatoes 1.25kg
Mushrooms 300g
Grated cheese 250g
Chorizo 250g

Method.
Turn oven on, 200 degrees and place a large baking tray in there to warm.
Peel and dice the potatoes (I have fairly large cubes), put the potatoes in saucepan full of boiling water and boil for 5 mins. Then strain them in a colander.
Take the large baking tray out of the oven and pour 2 tbsp of olive oil on the tray. place back in the oven for two minutes. Season with salt and pepper.
once the oil has warmed, tip the drained potatoes on the tray.
toss the potatoes in the oil and place back in the oven for 45 mins. tossing the potatoes every 15/20 mins to ensure even browning and crisping.
Quarter the mushrooms and place in a lidded pyrex ovenproof dish. sprinkle salt and pepper and a tbsp of olive oil. Cook for 30 mins.
Lay out the chopped chorizo on a baking tray and warm through in oven for 8 mins.
Grate the cheese
Take the guacamole out of the fridge, so that it comes to room temperature.
then to plating .....
Plate all the parts of the loaded 'fries' individually on the plate, to leave for your guest to mix up. Potatoes, mushrooms, cheese, guacamole and chorizo.
