Fresh fresh fresh. This tasted delicious and was healthy too :-)
I was looking for a low carb tasty fresh dinner. I love raw veg but needed to bring it alive. I started with the idea of the pork mince in the lettuce leaves but the recipe developed into pork mince with the slaw instead. It was great and I can’t wait to share.
so this is what I ended up with.

ingredients
a cup of shredded cabbage
a shredded pak choi
Three shredded carrots.
two minced garlic clove
two tsp of chopped ginger
a tbsp fish sauce
a tbsp soy sauce
a tsp of palm sugar
a tap of rice wine vinegar
a cup of chopped coriander
300 g pork mince
half a finely chopped onion. tsp sesame oil
I placed a tsp of ginger, one minced garlic clove, the soy sauce, rice wine vinegar and palm sugar in a jar and shook multiple times (While I chopped the veg)

Then I moved onto to veg
I chopped, shredded or ribboned the cabbage, Pak Choi, carrots and coriander And chucked them in a bowl and tossed

Now onto the pork ....
In a frying pan or skillet place tsp of oil, half a chopped onion, a tsp garlic and ginger and on a medium heat stir for 2 mins. Then add the pork mince and fry. (I added some mushrooms too but this was just an addition from me rather than part of the recipe) Splash in a tbsp of fish sauce and a splash of soy sauce. cook for five minutes or until the pork mince is cooked. Try not to over cook as it will become dry.
then time to assemble
Put the slaw dressing on the slaw and mix in well
the serve with the pork and again, mix in well.

then eat and enjoy :-)
