Breakfast potato cake and poached egg

This was so yummy.

Spiralise two jacket potatoes (after they have been pealed), add them to boiling water and boil for 5 minutes. Then strain and add to a large bowl.

Add the chopped onion and the bacon lardons to the pan and fry until crispy.


Add the fried onions and the bacon to the potatoes in the bowl.

Add salt and pepper and a sprinkle of flour.

Mix all




Leave to cool.


When cool enough to hold in your hand. Cup a quarter of the mixed in your hand and create a pattie. Make all four patties and the place them into the frying pan on a medium heat to cook and crisp up.





Once they are crispy (about 10 minutes) turn over and cook for further 10 mins.


Poach the eggs


Get ready for serving. Place two potato cakes on the plate and place the poached egg on top. Add some rocket, if you have it, and sprinkle salt and pepper over the food.

Ingredients (serves two)


Two jacket potatoes

100 g Bacon lardons

One medium white onion

Tsp salt

Tsp pepper

Two organic eggs


(rocket if you want)
